Fish & Chips

I made fish and chilli chips for dinner last week so here is the recipe. Kenny said it was the best battered fish he’s ever tasted!

Mrs Hackneys Recipe for Chilli Chips:

Ingredients:

4 Potatoes
Olive Oil
Salt & Pepper
Chilli Flakes
Chilli Powder

1. Leave the skin on the potatoes and cut into thick wedges.
2. Place them on a baking sheet and drizzle over olive oil and all the seasonings.
3. Bake for approx 45 minutes until golden.


Recipe for Battered Fish:

Ingredients:
200ml Lager / Beer
100g Plain Flour
½ tsp Baking Powder
1 tbsp Cider Vinegar
Fish Fillets – Skinless. Haddock, cod or Pollock work best. (I could only get some with skin on so had to remove this before placing in the flour) I used Haddock.

1. Sieve the flour and baking powder into a bowl and season with salt.
2. Gradually add the lager and vinegar and mix quickly to get rid of lumps – it should be the consistency of thick cream and should coat the back of a spoon.
3. Heat oil (I used sunflower) in a pan / frying pan to at least 5 cms deep. The oil should be at 160 C.
4. Squeeze some fresh lemon juice over the fish, dust the fish with plain flour and then place in the batter.
5. Fry for approx 8 – 10 minutes or until the fish is golden brown. (Keep the first one warm in the oven whilst you are frying the second one)

Serve with the chilli chips. I also served this with mushy peas (2 x tins of mushy peas with added butter, white pepper and a splash of double cream in). I also made some homemade mayonnaise. Recipe below:

Homemade Mayonnaise

Ingredients:
2 egg yolks
½ teaspoon Dijon mustard (I used English mustard)
1Dessert Spoon white wine vinegar (I used 1 x tbsp)
225ml Oil - Rachel likes to use 200ml sunflower oil and 25ml olive oil

1. Put the egg yolks into a pyrex bowl, add the salt, mustard, and vinegar and mix.
2. Very gradually,drop by drop, add the oil, whisking all the time.
3. You should start to see the mixture thickening, keep adding the oil as you whisk until there is no more oil left.
4. I also added a splash of lemon juice and black pepper.
